Purple Velvet Smoothie:

Ingredients-

  • 2 scoops of DEF (Daily Essential Formula) - See here Synergised (contains protein, multivitamins, minerals and more)

  • 1 cup of spinach

  • 1 cup of wild organic blueberries

  • 1/2 avocado

  • 1/2 tsp Organic Ceremonial Grade Matcha powder

  • 2 Brazil nuts

  • 2 Walnuts

  • Sprinkle of rock salt (electrolytes)

  • Topped up with filter water

Method-

Add all ingredients to a blender (I use the Vitamix), blend for 1 minute, slowly making your way up to level 7 blend, serve and enjoy a delicious smoothie packed with all the nutrition you need to feel satiated, stabilise blood sugar, balance hormones and feel energised!

Lentil Shepherds Pie:

Ingredients-

  • 1 cup of lentils (soaked) Alternatively canned

  • 3 sweet potatoes

  • 1 small onion

  • 1 cup of peas

  • 2 carrots

  • 3 chestnut mushrooms

  • 3 cloves of garlic

  • Herbs - rock salt, pepper, rosemary, thyme, sage.

  • Tbsp coconut oil

Method-

  • Finely chop carrots, mushrooms and onions

  • Chop sweet potatoes and steam them until soft, throw peas in for last 5 mins

  • Add the coconut oil to a pan (I use cast iron pans), throw in your chopped veg and slowly cook with all your herbs. Add a little coconut cream for sauciness if you like

  • Crush garlic and get the lentils ready, add these to the pan of veggies for the last 10 minutes

  • Mash the sweet potatoes with some rock salt and pepper

  • Put your pan of veggies and lentils into an over proof dish, spread the sweet potatoes on top, add some herbs on top and bake for 15-20 minutes
